I was surprised by how simple this was. I learned the recipe from a neighbor and made it my own since I’m not a big fan of spicy food. I used cod, but you can use tilapia or any whitefish you like. Cut it into bite-sized pieces, toss them in a bowl with

  • one teaspoon of chili powder,

  • one teaspoon of cumin,

  • half a teaspoon of garlic powder,

  • and a pinch of salt.

  • I went light on the salt since there’s already plenty in my cowboy caviar. Use whatever fish you have on hand—this is super easy, quick to cook, and delicious. Cook it for about 12 minutes in a preheated pan with olive oil, giving it a stir after a minute or two. Now it’s time for the tortillas. I like the little mini corn or flour tortillas. I used corn, but you can hear them in a dry skillet for 30 seconds per side until they’re bendable. I actually prefer to cook the little corn tortillas in a bit of oil, but that’s just me.

Now it's time for assembly :

  • line up your little tacos in a row and then fill them up put your fish in top it With your cowboy caviar that you made earlier in the week then top it with your creamy sauce and enjoy
