Beef & Veggie Bowl

Ingredients

  • 1 lb ground beef

  • 2 bell peppers, sliced or diced

  • 1 small onion, diced

  • 2 cups broccoli florets

  • 1 tsp chili powder (adjust to taste)

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • Optional: cooked carb of choice (I like bowtie noodles)

Instructions

  1. Heat a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned.

  2. Drain excess fat through a strainer if you prefer less grease.

  3. Return beef to the pan with the onions and peppers. Cook until the onions are translucent and peppers have softened.

  4. Add broccoli and cook until tender-crisp.

  5. Season with chili powder, garlic powder, salt, and pepper. Stir to combine and heat through.

  6. Serve the beef and veggies alone for a low-carb option, or over a cooked carb like bowtie noodles, rice, or your pantry staple of choice.
